Shepherd's Pie
- tempeh, sliced thin 
- 1/2 medium onion small dice 
- 1 large carrot, medium dice 
- 1 # peas 
- 1 1/2 cup corn kernel 
- 2 # potato, boiled and mashed 
- 1/4 cup earth balance 
- 1/2 cup broth 
- 1 t worcestershire 
- Salt and pepper to taste - Directions - 1. Saute onions and carrots until tender then add tempeh and cook until browning occurs. - 2. Add peas and corn, broth and worcestershire and simmer for 2-4 minutes. - 3. add earth balance to mashed potatoes and season with salt and pepper. - 4. using a casserole dish, first place tempeh/ vegetable mixer then top with mashed potato. - 5. Bake at 350 for 15- 20 minutes.
